text Hydroxyallysine and hydroxylysine can react forming the Schiff base, which spontaneously undergoes an Amadori rearrangement resulting in the ketoimine cross-link hydroxylysino-5-ketonorleucine (HLKNL). This is much more stable than the aldimine crosslinks (Bailey et al. 1998).
