Olah hydrolyzes decanoyl-Fasn dimer to decanoate and Fasn dimer
De novo fatty acid synthesis in the lactating mammary gland yields fatty acids containing 8 to 12 carbon atoms (e.g., Carey & Dils 1972; Libertini & Smith 1978) as well as fatty acids containing 14 to 18 carbons. These medium chain length fatty acids are generated through the action of a monomeric cytosolic thiolase, Olah, whose expression is confined to this tissue. Rat Olah protein interacts transiently with Fasn (fatty acid synthase) associated with medium chain length fatty acyl moieties to catalyze their release as free fatty acids (Mikkelsen et al. 1987).

The carboxyterminal residue of rat Olah protein is ser-260 (Randhawa & Smith 1987), three residues before the termination codon in the cloned gene (Safford et al. 1987).
